Last weekend, my good friend Otto came over my house to spend the Sunday afternoon with us! Otto was born in Italy, and he decided to delight us with a very special risotto his grandma taught him… Here is the recipe for you to try it at home and fall in love even more with the amazing Italian cuisine!
INGREDIENTS (for two)
- 1 cup rice
- 350ml water
- 1u chicken soup
- 3Tbsp olive oil
- 1 chopped onion
- 1 chopped carrot
- 1 chopped small yellow cayenne
- 50g mozzarella cubes
- Chopped parsley
Dissolve chicken soup in the water, add rice, the chopped carrot and bring to boil (the water must cover the rice).
In another pan, add olive oil and stir-fry chopped onion and the cayenne. When rice have almost absorbed the water, add the onion and cayenne, the mozzarella cubes and wait between 2-4 minutes with medium heat.
Serve the dish and decorate it with seeds and parsley.
